Carrot and Pineapple Muffins

Ingredients
1 cup Wh. sugar
⅔ cup oil
2 eggs
1 can crushed pineapple with juice
1 ½ cup flour
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
1 tsp. cinnamon
1 cup grated carrots
¾ cup raisins
½ cup chopped nuts
Instructions
Combine sugar, oil, eggs and pineapple. In small bowl mix, well. Combine flour baking powder, baking soda, salt, cinnamon in large bowl stir well to blend. Add liquid ingredients all at once to dry ingredients. Stir just until all dry ingredients are moistened. Stir in carrots, raisins and nuts. Fill greased muffin tins ¾ full. Bake at 350° for about 20-30 min. Makes a dozen.
