Lemon Zucchini Loaf with Lemon Glaze (Betty Crocker’s)

Ingredients

  • 1 lemon Cake mix

  • 3 Eggs

  • 1 ½ Cups Shredded Zucchini

  • 1 Tbsp. vegetable Oil

  • 1 Tbsp. Lemon Zest or 2Tbsp. Lemon Juice

Instructions

Combine ingredients and mix well. Bake at 350 for 40 minutes. (Opt. you can add ½ Cup of ground Poppy Seeds).

Glaze

 

Ingredients

  • 1 ½ Tbsp. lemon Juice

  • ½ Cup White Sugar

  • 1 Cup Icing Sugar

Instructions

Mix well and pour onto warm lemon loafs.
