Blueberry Muffins

Ingredients

  • 4 cups Flour

  • 1 cup Butter

  • 1 cup Oat bran

  • 2 cups Sugar

  • 1 Pk. Vanilla instant pudding

  • 4 Eggs

  • 2 tbsp. Baking Powder

  • 2 cups Butter Milk

  • 1 tsp. Salt

  • 1 ½ tbsp. Vanilla

  • 4 cups Blueberries (Fresh or Frozen)

Instructions

In a large bowl cream butter and sugar. Beat in eggs until quite smooth. Mix in milk and vanilla. Add in dry ingredients. Mix together thoroughly. Batter will be lumpy. Fold in blueberries into batter. Fill greased muffin cups ¾ full. Bake at 400 F for 20-25 minutes or until nicely browned. Makes about 2 ½ dozen.
