Breakfast Muffins

Ingredients
3 cups shredded hash browns
1 egg
1/3 cup shredded cheese
½ tsp salt
¼ tsp pepper
1 tsp dried parsley
1 tsp crushed garlic
¼ tsp paprika
1 tsp olive oil
Instructions
Preheat oven to 400°f. Spray two 12 cup muffin tins with Pam. Mix all ingredient’s together until well combined. Evenly spread mixture into muffin tins. Press down on the mixture making it flat. Bake for 10-15 minutes or until slightly browned and crispy.
Egg mixture
Ingredients
12 eggs
½ cup milk
1 cup shredded cheese
1 lb chopped bacon
½ tsp salt
½ tsp pepper
1 ½ tsp dried parsley
Instructions
Mix all ingredient’s and pour on top of hash browns. Bake for another 10-15 minutes or until eggs are fully cooked. Let cool for a few minutes before removing from tins.
