Angel Food Cake

Ingredients
1 cup flour
½ cup wh. sugar
1 cup wh. sugar
1 ¼ cup egg whites (10-11 eggs)
1 ¼ tsp cream of tartar
1 tsp. vanilla
¼ almond extract
½ tsp. salt
Instructions
Beat eggs at room temp, and salt until foamy, sift in the cream of tartar and continue beating until stiff. Sprinkle 1 cup sugar over the egg whites sifting sugar first. Beat in flavouring. Sift the remaining flour and sugar over egg mixture folding in lightly after each addition. Turn mixture into an ungreased 10” tube pan, cut through the batter with the knife leveling it and bake at 375° until cake is firm to touch and lightly browned (35-45 min). Cool in pan turned up side down.
