Fondant Base –Hard Icing

Ingredients

  • 2 cups white sugar

  • 4 egg whites (room temp.)

  • ½ cup water

  • 1 ½ cup icing sugar

  • ¼ tsp cream of tartar (sifted if lumpy)

Instructions

Boil sugar, water and cream of tarter to 240°f (soft ball stage). Meanwhile, beat egg whites for 7 minutes at high speed. Add boiled sugar to egg whites slowly while mixing. Add icing sugar and beat another 3-5 minutes. Cover with damp cloth while using, re-beating will not restore original texture. Keep covered.
