Ingredients

  • 2 8oz. Packages Cream Cheese (Softened)

  • 1 Cup White Sugar

  • 2 Eggs

  • 1 Tbsp. Lemon juice

  • 1 Tsp. vanilla

  • 24 vanilla Wafers

  • 1 Can of Cherry or Blueberry pie filling

Instructions

Preheat oven to 350 F. Line muffin tins with cupcake papers and put one wafer upside down in each one. Beat eggs until foamy and gradually add the sugar. Beat until fluffy and then add lemon juice, vanilla, and cream cheese. Then beat until smooth and place a heaping Tsp. of batter on top of each wafer. Bake for 20 minutes and let cool. Then spoon a heaping Tsp. of pie filling on top and serve.
