White Zucchini Cupcakes

Ingredients

  • 3 eggs beaten

  • ¼ tsp baking powder

  • 2 cups Wh. sugar

  • 1 tsp baking soda

  • 3 tsp vanilla

  • 1 tsp salt

  • 1 cup veg. oil

  • 1 tsp cinnamon

  • 2 cups zucchini

  • 1 cup chopped nuts

  • 3 cups flour

Instructions

Beat eggs until light, then add sugar, vanilla and oil. Blend well stir in zucchini. Sift dry ingredients and add to cream mixture, fold in nuts. Pour into large cupcake holders for 20 min. at 350°. Cool and ice with broiled icing. 

Broiled Icing

 

Ingredients

  • ⅓ cup marg.

  • ⅔ cup chopped nuts

  • ¾ cup Br. Sugar

  • ⅔ cup coconut

  • ¼ cup evaporated milk

  • ⅔ cup choc. Chips

Instructions

Cream marg. and sugar, then add remaining ingredients. Broil 2-3 min until bubbly and lightly browned.
