Tapioca Cream Pudding

Ingredients

Combine in Saucepan:

  • 3 Tbsp Minute Tapioca

  • 1 Egg yolk beaten

  • 2 Tbsp Sugar

  • 2 cups Milk

  • Pinch of Salt

Instructions

Cook over medium heat stirring constantly, until mixture comes to a full boil. Remove from heat.

Beat until stiff:

  • 1 egg white

Add in:

  • 2 Tbsp Sugar

  • ½ Tsp Vanilla

Gradually fold tapioca mixture into meringue

Note:

To make a chocolate version, add 2 ½ Tbsp. instant chocolate drink powder to milk in above recipe.
